Using Ester Old Tom Gin as a base, they reserve this sweet summer liquid in a barrel formerly used for heavily peated whisky and let it rest for four months. It’s got more character than a Clint Eastwood Western, deep warm amber notes suffused with sweet, and smoky slightly vegetal flavours.
