Created by to hospitality veterans, husband-and-wife Corinna and Felix, who are in their own words “full-blown flavour fanatics,” inspired by the quest to create the perfect negroni. An obsession that started over 10 years ago with a tiny still in their backyard. Officially launcheing in 2020 after a slew of recipe testing and tinkering.

They follow one rule first and foremost when distilling, to have lots of charismatic flavour, which they achieve by using much higher amounts of botanicals than typical, including Australian botanicals wherever possible, with an all-in distillation method. Their second rule is to have balance, with the mentality of a chef, so that no single component blows the others away, in both flavour and texture.

Barrelling out the gate, it was less than a month after they launched that Ester Strong Gin won ‘Best in Show’ at the Australian Gin Awards. Only the first of many prestigious awards that their spirits would take home over the coming years. This high quality includes their red-washed Marrickville tasting room, with a lux artist’s studio vibe, which was nominated for Best Distillery Bar 2024 by Australian Bartender Magazine.
