Launched in 2018 by husband-and-wife team Nick and Ally, Karu Distillery sits at the mouth of The Devils Wilderness in the Blue Mountains National Park northwest of Sydney. This fits perfectly with their mindfulness of sustainability and the environment, as well as their use of native botanicals to capture the flavours of the Australian bush.

Focused on creating spirits that highlight both the science and the art of distillation, they pride themselves on having a high level of research and development, which has in turn earned them many awards locally and internationally. A key part of this is having their own garden where they grow most of their own botanicals, along with other native plants that they experiment with, and using locally sourced ingredients where possible when they can’t use their own.

The pawprint in their logo belies the meaning of their name, which is Estonian for bear, a tribute to Ally’s great grandfather who tried distilling after arriving in Australia.
